How do I brew hawthorn berry tea from whole berries?

Whole hawthorn berries are dense, so we make them as a decoction rather than a quick steep. Add about one tablespoon of berries to two cups of water, bring it to a gentle simmer, and let it go for 15 to 20 minutes with the lid on. Strain, and enjoy the deep cherry and cranberry notes on their own or blended with hibiscus or rose hips. The longer, gentle simmer is what draws the full flavor and color out of the whole fruit.
