Should I buy whole pods or ground star anise?

Illicium verum is native to the warm, humid evergreen forests of Vietnam and southern China, the conditions it evolved in. We partner with a vetted Vietnam farm that specializes in exactly those conditions and grows it right where it flourishes, to the same soil-first, biological standard that defines our own Colorado farm. How do I get the most aroma from star anise?

Toast the whole pods in a dry pan for 30 to 60 seconds until fragrant, then lightly crack one or two and add them to your simmering liquid. A gentle, longer simmer draws out the sweet licorice depth, so we add the pods early and strain them before serving.
